Chilling (Machine Named as: Spiral Chiller,Screw Chiller,Carcass Chiller, Water chilling,screw type chiller)

The water chill process is used throughout the world.A medium or hard scald is often combined with a chill method, Where water or spray chilling is used to keep products moist.

Priciple: This water chilling method usually worked by a screw chiller, divided into two parts, first part function is washing and disinfection,the second part is chilling.The main step is as follow: The carcass can be dropped automatically from the evisceartion line into ling spin washer tanks, which contains water at a temperature of 10-16°C.The birds have a body temperaute of 36°C.After 10 minutes in the washer the carcass are about 24°C.The carcass are propelled along the tanks by screw paddles.The water through the tanks may be with or contra-flow the direction of the carcasses. Chlorination is used at a level of 50 ppm free chlorine,which kills almost completely all bacteria in the tanks. Then the carcasses are transferred from the washer unit by an conveyor into the long immersion chiller tank.this works on the same principle as the washer unit.Flake ice is dropped into the water in the chiller tank from overhead flake-ice machines. Some chillr are fed with refrigerated water.The birds remain in the chiller tank for 3--40 minutes and leave at a temperature of 2-4°C. Chilling can also be achieved by accurately directed flow of cold air or by water film chilling,based on the evaporation of moisture which remove the heat from the carcass.
